Biriyani is a flavorful rice layered with cooked meat or vegetables and a lot of Whole Spices & Saffron. It is believed to have originated from Asian sub continent and is a remarkable cuisine for occasions and festivals. It can be made in a number of ways with including all kinds of vegetarian and non-vegetarian components.

This recipe of mine is a special one with the use of fresh and homemade Spices mix and Saffron milk. This Biriyani is made with the layering of cooked Camel meat in a gravy, which adds to its health factor as well.

In fact, Camel meat is a good source of good quality proteins and lower in Cholesterol of fats as compared to other red meats and so a wonderful option to try. Even though Biriyani is taken as a high calorie diet, but making it at home with the correct use of good quality fats and spices can provide to be much healthier than restaurant made ones.

Camel meat being high in proteins and low in cholesterol is a good option for health conscious people to enjoy with the fantastic combo of Biriyani.

This recipe includes an easy to make Step by step demonstration of the preparation methods with tips and tricks to help you make the prefect and delicious Biriyani. The exact measurements of the ingredients used and the correct method of using them is also demonstrated in the video attached.

Here we present to you an amazing recipe of a special Biriyani with Camel Meat. Biriyani is a flavorful rice layered with cooked meat or vegetables and a lot of Whole Spices & Saffron. Equipment

  • Mixed grinder
  • Frying Pan
  • Pressure cooker
  • Deep bottom cookware

Ingredients
  

Briyani Spices

  • 1/2 tsp Pepper corns
  • 1 – 2 small Cinnamon stick
  • 2-3 nos Cardamom
  • 3-4 nos Cloves
  • 1 Bay leaf

Ground paste

  • 8-10 nos Garlic cloves
  • 1 inch Ginger
  • 5 nos Green Chilly

For Garnish

  • 10-15 strands Saffron
  • 2 tbsp Milk

For Garnish

  • 2 tbsp Ghee
  • 10-15 nos Cashew nuts
  • 1/4 cup Raisins

For Biriyani Rice

  • 1/2 cup Ghee
  • 1/2 tsp Pepper corns
  • 1-2 small Cinnamon sticks
  • 3-4 nos Cloves
  • 2-3 nos Cardamom
  • 2-3 Bay leaves
  • 1 cup Onion sliced
  • 2 cups Basmati Rice
  • 4 cups Warm water
  • Salt as per reqd
  • 2 tbsp Lemon juice

For Cooking Meat

  • 750 gms Camel Meat or any meat of choice
  • 2-3 tbsp Cooking Oil
  • 2 tbsp Garlic
  • 2 tbsp Ginger
  • 5 nos Green Chilly
  • 1 tbsp Pepper powder
  • 2 tbsp Coriander leaves
  • Salt as per taste

For Roasting Meat

  • 2-3 tbsp Cooking oil
  • 2 cups Onion sliced
  • 1 tsp Turmeric powder
  • 2 tsp Coriander powder
  • 2 tsp Red Chilly powder
  • Ground paste all ready prepared
  • Biriyani Spices all ready prepared
  • 2 cups Tomato
  • 2 tbsp Coriander leaves

Instructions
 

STEP 1 Biriyani Spices

  • Add all the ingredients mentioned into a grinder jar and grind them to a fine powder.
  • And keep aside.

STEP 2 Ground Paste

  • Add all the ingredients into a grinder jar and grind them to a paste form.
  • And keep aside.

Step 3 For Garnish

  • Take Saffron strand in a bowl and add Milk into it.
  • Mix and keep to rest.

STEP 4 For Garnish

  • Heat a frying pan and add Ghee.
  • Add in Cashews and roast them to light brown.
  • Add in Raisins and roast all together.
  • Once done, keep aside.

STEP 5 COOKING BIRIYANI RICE

  • Heat a heavy bottom cookware.
  • Add in Ghee, and followed by all the ingredients one by one.
  • Sauté the Onion till they are transparent and soft.
  • Then add in the Ground paste and sauté them all.
  • Now add the cleaned Basmati rice and fry till the rice crackles.
  • Add the water necessary for cooking rice, add salt and lemon juice, then cover and cook till rice is 90% done.
  • Once rice is ready then keep aside.

STEP 6 COOK MEAT

  • Heat a pressure cooker and add oil.
  • Add in the mentioned ingredients and sauté them.
  • Take cleaned and drained meat and add into the pressure cooker.
  • Mix in all together and Salt, pepper and coriander leaves and keep to cook till well done.
  • Once meat is cooked well, we are left with roasting the cooked meat.
  • Into a cookware add all the ingredients mentioned in Roasting the meat section.
  • Sauté them all and add the Ground spices and roast them also.
  • Add diced tomatoes and cook them.
  • Now add the cooked meat and mix all well.
  • Lastly add chopped coriander leaves and cover and cook for a while.
  • The Roasted meat is ready.

STEP 7 SET BIRIYANI FOR DUM (STEAM)

  • Into the same cookware of meat, add half portion of the rice and spread evenly.
  • Garnish with Saffron milk and the roasted nuts.
  • Again layer with the remaining rice and then followed by Saffron milk and the roasted nuts.
  • Finally garnish with chopped coriander leaves.
  • Cover with a lid tightly so that steam does not escape out.
  • Keep at simmer for 10- 15 mins.
  • Camel Biriyani is ready to serve.
  • Serve hot and enjoy.
